Veggie-packed & balanced: Not too heavy on noodles, with plenty of fresh crunch.
No sogginess: Separate frying keeps everything perfectly textured.
In Japan, summer and fall are matsuri (festival) season. Vibrant street celebrations filled with music, colorful yukata, paper lanterns swaying in the breeze, beautiful fireworks, and the mouthwatering smell of sizzling food in the air.
I still remember going to a matsuri with my friends, all of us dressed up in yukata! We took purikura (of course), walked around for hours, randomly bumped into friends on the street, and, of course, devoured all the delicious street food, especially yakisoba.
I haven’t been able to join a matsuri recently since my trips to Japan haven’t lined up with the festival season, but one day I’d love to wear a yukata again and go to one with my husband!
Until then, I’ll bring the matsuri vibes home by making yakisoba and eating it out on the patio… instant nostalgia. ☀️🍜✨
